Cooking time 40-50 mins
1 whole chicken, chopped into quarters
2 tablespoons chilli powder (more if you like it HOT HOT)
zest of 1 lemon
4 cloves of garlic, finely chopped
1 heaped tablespoon of ghee
Preheat oven to 180c. Melt the ghee (you can use olive oil) and mix with the chilli, lemon zest, salt and garlic. Coat the chicken pieces and cook in a baking dish for 40-50 mins until the juices run clear.
You can have this cold or hot, with a salad or veg.
